Roasted Red Pepper, Hummus, Avocado, and Feta Sandwich

Hey! You! Eat this for lunch!

Ingredients:

  • 2 slices whole wheat bread
  • hummus
  • 1 pitted avocado
  • handful of crumbled feta cheese
  • 1 teaspoon lemon juice
  • 1/2 tablespoon freshly chopped basil
  • salt and pepper to taste
  • a few pieces of roasted red pepper, drained
  1. Spread each bread slice evenly with hummus.  Set aside.
  2. In a small bowl, mash avocado and feta together with a fork.  Add lemon juice, basil, salt, and pepper.
  3. Spread the avocado mixture over the hummus.  Top with the roasted red peppers.  Place the other pieces of bread on top.
  4. Brush the slices of bread with olive oil and place in hot pan.  Grill on each side until toasted.
  5. Hey! Enjoy.
